We have a fantastic vacancy for a Pastry Sous Chef to join the prestigious culinary team at our Michelin-starred Lady Helen Restaurant. Lady Helen is Mount Juliet Estate's Michelin-starred fine dining restaurant, led by Executive Chef John Kelly, and renowned for its refined modern Irish cuisine, seasonal tasting menus, and elegant service within the historic Georgian Manor House. This is an exciting opportunity for a passionate and career-focused individual looking to advance their skills in pastry within a fine dining environment.

Key Duties And Responsibilities

* Estimating costs and ensuring all purchases come within budget.
* Taking care of the kitchen's ordering and invoicing procedures .
* Liaising with the relevant companies for food orders and keeping up to date with the latest food trends,
* To manage and direct the kitchen on a day-to-day basis and to show excellent leadership and guidance,
* Creating of new concepts and menu planning in working with the Head Pastry Chef
* Ensure that health and safety standards are met within the kitchen
* Guest Relations where appropriate
* Have thorough knowledge and understanding of all standards of performance and delivery within your department.
* Strong leadership, training skills and the ability to manage all aspects of a busy kitchen also essential.
* The successful candidate will have complete control of all kitchen activities, including overseeing staff, menu preparation, ensuring food quality and freshness, ensuring all HACCP is complete and fully compliant and overseeing all food ordering, stocking and food Costs.

Requirements :

* Experience in a similar position within a professional, busy 5 star kitchen environment
* Strong knowledge of HACCP and food safety procedures
* Experience in a variety of cuisines
* Strong attention to detail, ability to multi-task
