About the Role:
Noel Group is currently recruiting a Senior Sous Chef on behalf of a leading four-star hotel in Galway.
This is an excellent opportunity for an ambitious and experienced culinary professional to join a busy, high-volume kitchen operation within a well-established hospitality venue.
The successful candidate will play a key leadership role within the kitchen team, supporting the Executive Head Chef in delivering exceptional food standards across restaurant, banqueting, conference, and event operations.
The position is ideally suited to a chef with strong people management skills, a passion for quality ingredients, and experience working within a fast-paced hotel environment.

Key Responsibilities
Support the Executive Head Chef in the day-to-day management of all kitchen operations
Lead, motivate, and develop the kitchen brigade to ensure consistently high standards
Ensure all food is prepared and presented in line with company standards and guest expectations
Assist with menu planning, development, and seasonal menu changes
Oversee food preparation and service across restaurant, banqueting, conference, and event functions
Monitor food quality, portion control, and consistency across all service periods
Manage stock control, ordering, and supplier relationships to minimise waste and maximise profitability
Ensure full compliance with HACCP, food safety, health & safety, and hygiene regulations
Assist in managing kitchen labour costs and departmental budgets
Act as the senior kitchen lead in the absence of the Executive Head Chef
Key Requirements
Previous experience as a Senior Sous Chef or Sous Chef within a busy hotel or high-volume food operation
Strong leadership experience managing and developing kitchen teams
Excellent knowledge of food preparation, presentation, and kitchen management practices
Proven experience working with HACCP and food safety regulations
Strong organisational and time management skills
Ability to perform effectively under pressure in a fast-paced environment
Passion for delivering high-quality food and guest experiences
Excellent communication and teamwork skills
Flexibility to work evenings, weekends, and peak business periods as required
Must be authorised to work in Ireland
