The Wicklow Escape an exclusive destination dining mountain lodge is recruiting an experienced chef experience to join our team in the Wicklow mountains. We are looking for an experienced head chef to manage all elements of the food business with an interest in sustainability, zero waste and growing would also be a huge bonus as we have 1.5 acres to grow on, a permaculture kitchen garden and a large glass house. Established fruit bushes and apples trees as well as as mature herb plants dotted around.
You will be working on all elements of our private hire venue guests. Both modern Irish and woodfired seasonal food tasting menus are enjoyed by our guests who's numbers average 18-40.
Must have a car as we are in the mountains.
As chef, you will be
* Passionate about sustainability and zero waste.
* Interested/experienced in growing on our acre and a half grounds
* Cooking and preparing high-quality dishes in the kitchen and in our woodfired and commercial kitchen
* Ordering where possible with locally sourced produce.
* Create menu items, recipes and develop dishes
* Working in tandem with our team and inspiring the younger wans to love working in the kitchens (no Gordon Ramsey shouting sh*te)
* Being responsible for health and safety
* Being responsible for food hygiene practices
* Ensuring food quality and excellent standards are maintained for all dishes created
* Assisting with determining food inventory needs, stocking and ordering
* Ensuring the kitchen meets all regulations including sanitary and food safety guidelines
We are Closed Mondays and Tuesdays and most events run Thursday to Sunday. Working weeks are normally Thursdays to Sundays (closed after breakfast Sunday) with the odd Wednesday event.

Pay: €22.00-€25.00 per hour
