Job Title: Sous Chef
We are seeking a Sous Chef to join a 4-star hotel in County Cork. The Sous Chef will assist the Head Chef in ensuring the smooth operation of the kitchen, maintaining high standards across all areas, and supporting the team in a safe and hygienic environment.
Key Responsibilities:
1. Develop new menu options based on seasonal changes and customer demands.
2. Take full responsibility for all food leaving the kitchen during service, ensuring presentation and taste are up to standard.
3. Assist with meal design, planning, and costings.
4. Ensure timely kitchen operations.
5. Monitor inventory levels and order supplies as needed.
6. Support junior staff with line cooking, food prep, and plating.
7. Recruit, train, and evaluate kitchen staff.
8. Create and review staff rotas, considering holiday and absenteeism needs.
9. Implement and adhere to sanitation and safety regulations, including HACCP standards.
10. Manage kitchen team in the absence of the Head Chef.
11. Maintain cleanliness and hygiene in all kitchen areas and equipment.
12. Assist in daily food prep, inventory checks, portion control, and quality assurance.
13. Participate in staff meetings and ensure compliance with all procedures.
14. Order supplies such as dry goods, wine, meats, and produce.
Candidate Requirements:
* Previous experience as a Sous Chef or aspiring to step into this role.
* Hotel experience preferred but not essential; broad hospitality experience is valuable.
* Leadership by example and excellent communication skills.
* Strong attention to detail.
Additional Information:
Accommodation is available a short walk from the hotel at €125 per week, inclusive of rent and bills.
