Role Overview

We are seeking a talented and motivated
Sous Chef
to join our culinary team. The successful candidate will support the Head Chef in delivering consistently high standards of cuisine aligned with Michelin-level expectations. This role requires technical skill, leadership ability, creativity, and a passion for using the finest local ingredients.

Key Responsibilities

Kitchen Operations

* Assist the Head Chef in the day-to-day running of the kitchen
* Ensure all dishes are prepared and presented to the highest standard
* Maintain consistency, quality, and attention to detail across all services
* Take responsibility for kitchen operations in the absence of the Head Chef

Menu Development & Food Quality

* Contribute to menu planning and development, with a focus on seasonal and local produce from our Kitchen Garden
* Uphold the culinary philosophy and standards expected of a Michelin Key property
* Monitor food quality at all stages of preparation and service

Team Leadership & Training

* Supervise, mentor, and motivate junior kitchen staff
* Support training and development of commis and chef de partie team members
* Foster a positive, professional, and collaborative kitchen culture

Health, Safety & Compliance

* Ensure full compliance with HACCP, food safety, and hygiene regulations
* Maintain a clean, organised, and efficient kitchen environment
* Monitor stock rotation, storage, and waste reduction

Stock & Cost Control

* Assist with ordering, stock control, and supplier liaison
* Help manage food costs while maintaining quality and sustainability standards

Candidate Profile

Essential Requirements

* Proven experience as a Sous Chef or strong Chef de Partie in a high-end or fine dining kitchen
* Strong classical culinary skills with modern influences
* Experience working with fresh, seasonal, and locally sourced ingredients
* Excellent organisational and leadership skills
* Strong knowledge of food safety and HACCP

Desirable

* Experience in Michelin/Rosette recognised or equivalent luxury hospitality environments
* A passion for Irish produce and regional cuisine
