Role Summary: Dawn Meats is one of Europe's leading food companies; suppliers of choice to a range of leading local, national and international supermarkets, foodservice and manufacturing businesses, exporting to over 50 countries worldwide. We are currently recruiting for the position of Food Safety and Quality Manager (FSQ). The Food Safety & Quality Manager will oversee and manage all aspects of food safety, product quality, and compliance at our new beef stock production facility. This role ensures that all products manufactured on site meet legal, customer, and company standards. The FSQ Manager will play a key leadership role in maintaining a strong food safety culture, implementing the Quality Management System (QMS), and supporting continuous improvement across the site. They will work closely with production, technical, hygiene, engineering, and commercial teams to ensure the delivery of safe, high‑quality beef stock products. While specific stock/broth experience is highly desirable, candidates with strong backgrounds in meat, food ingredients, or food processing are encouraged to apply.
Key Responsibilities
Lead the implementation and ongoing development of the site’s Food Safety & Quality Management Systems.
Ensure compliance with all legal, regulatory, and customer-specific standards related to food ingredients, broth/stock production, and meat-derived products.
Champion and drive a robust Food Safety Culture across the site.
Manage and improve the site QMS, ensuring documentation, SOPs, and process controls are maintained.
Oversee EQMS record management, audits, and internal audit programmes.
Lead HACCP development, review, and verification activities.
Monitor and verify critical control points and prerequisite programmes.
Manage the site's microbiological and chemical testing programme.
Ensure finished product specifications meet customer, legislative, and internal requirements.
Work with production teams to maintain product consistency and address quality deviations.
Support the Hygiene Team to deliver high cleaning standards.
Verify hygiene performance through audits and environmental monitoring.
Deliver and coordinate FSQ-related training (HACCP, food safety, hygiene, SOPs).
Work with engineering teams to ensure preventative maintenance supports food safety.
Participate in risk assessments for new equipment and materials.
Identify opportunities for process improvement, risk reduction, and quality optimisation.
Qualifications
Your role will see you tackle a wide range of business challenges in a busy food production environment.
The ideal Candidate will have or demonstrate:
Third-level qualification in Food Science, Food Technology, Microbiology, Process Technology or related discipline.
Strong understanding of HACCP principles and food safety systems.
Experience in meat processing, food ingredients, or stock/broth production (advantage).
Competent in managing customer interactions across commercial, technical, and new product development teams.
Experience and knowledge of CIP (Cleaning in Place) systems
Knowledge of food safety legislation and customer audit requirements.
Experience with BRCGS, customer audits, or regulatory inspections.
Excellent knowledge of food safety, quality systems, and QMS implementation.
Strong communication and influencing skills
