Duties & Responsibilities
* Take charge of sections in all kitchen areas and ensure the smooth running of the outlet, assisting other outlets when required.
* Provide assistance to the executive chef and executive sous chef in maintaining high standards of food preparation, presentation and hygiene.
* Prepare and cook dishes to the highest standard in the relevant section.
* Coordinate with senior chefs on a daily basis regarding ordering, prices and suppliers.
* Keep food wastage to a minimum.
* Train junior staff on recipes, presentation skills and cooking skills.
* Contribute to new menu development and cook‑offs, writing recipes and costing new menus for all outlets.
* Maintain highest levels of hygiene and safe working practices, including HACCP standards and record keeping.
* Monitor equipment maintenance, report unsafe or broken equipment.
* Reflect and enhance the hotel’s mission statement in all activities.
* Adhere to all employee handbook policies.
* Wear required safety clothing and equipment.
* Ensure all kitchen areas, fridges and equipment are cleaned, stocked, locked and safe by the end of each shift.
* Manage mise en place stock levels and follow fire and safety procedures.
* Attend training sessions and meetings as required.
* Carry out any other reasonable requests from the management team.
Qualifications & Requirements
* Experience in a 4‑star operational kitchen of 2–3 years.
* Valid work permit.
* Flexibility.
* Ability to work effectively as part of a team.
* A passion for cooking.
* Excellent hygiene and HACCP experience.
