Job Title: Food Purchasing Manager

The Group is comprised of several award-winning bars and restaurants based in Galway City, including: The Front Door, O'Connell's Bar, The Dáil Bar, the Brasserie on the Corner/Blake's Bar and Tom Sheridan's.
The Role
The Food Purchasing Manager will oversee the procurement of all food products for four restaurants, ensuring consistent quality, competitive pricing, and compliance with Irish food safety standards. The role involves supplier negotiations, cost control, stock management, and ensuring alignment with the menu and business objectives.
The Responsibilities
1. Procurement & Sourcing
* Source all food items in line with menu requirements and seasonal availability.
* Negotiate prices, payment terms, and delivery conditions with Irish and international suppliers.
* Maintain a strong supplier network and ensure multiple sourcing options to mitigate supply risks.
* Monitor market trends and food price fluctuations to optimise purchasing strategies.
2. Supplier Management
* Evaluate and select suppliers based on quality, reliability, and value for money.
* Conduct regular supplier performance reviews, ensuring adherence to service level agreements.
* Manage supplier rebates and LTA's
* Ensure all suppliers meet Irish food legislation and HACCP compliance.
* Ensure all suppliers are in compliance with the 5 rights of procurement.
3. Inventory & Stock Control
* Monitor stock levels across all restaurants to reduce waste.
* Stocktake each kitchen monthly.
* Produce preferred supplier stock sheets for chefs.
4. Cost Control & Budget Management
* Maintain and update supplier price files.
* Maintain and update menu costings for each site.
* Analyse purchasing data to identify cost-saving opportunities and improve gross profit margins.
* Maintain a target food cost percentage in line with budget expectations.
5. Compliance & Quality Assurance
* Ensure all purchased products meet HACCP, FSAI (Food Safety Authority of Ireland) standards, and traceability requirements.
* Maintain accurate documentation for audits and inspections.
6. Communication & Coordination
* Work closely with Head Chefs and kitchen teams to understand menu needs and seasonal changes.
* Provide regular reports on purchasing performance, supplier compliance, and cost analysis.
* Work closely with Head Chefs and Site Managers to develop long-term and seasonal menus, providing accurate costings and allergen information.
* Work closely with HR and H&S to ensure the smooth running of the kitchens and restaurants.
The Candidate
* Minimum 3–5 years' experience in food purchasing or procurement in a hospitality or multi-site restaurant group.
* QQI Level 7 Qualification in Supply Chain Management, Procurement, Hospitality Management, or a related field (preferred).
* Knowledge of the Irish supplier market and distribution channels.
* Strong negotiation and vendor management skills.
* Comprehensive knowledge of Irish food safety regulations and HACCP requirements.
* Analytical skills with the ability to manage budgets and control costs.
* Proficiency in Microsoft Excel and other accounts software (e.g., Autoentry, Sage or similar).
* Strong emphasis on what it is to be an Irish company and buying local.
