Executive Head Chef Job in Dublin 24
Location: Dublin
Salary: €49,000 - €53,000
We’re hiring an Executive Head Chef for a healthcare facility in Dublin 24. This is a full-time, permanent, and pensionable position. Working hours are 39 per week across 7 days, between 6:00 AM and 8:00 PM, including weekends and public holidays.
The successful candidate will lead a large kitchen team to deliver high-quality meals to patients, staff, and visitors using a hybrid cook-chill and cook-fresh production system. This role plays a key part in patient care, food safety, and service quality within a healthcare setting.
Key Duties and Responsibilities:
* Direct and support kitchen staff in food preparation and service to meet hospital SOPs and quality standards
* Collaborate with Dietitians and Speech & Language teams to develop menus and therapeutic diets
* Implement food safety systems including HACCP, IDDSI, and nutritional guidelines
* Oversee stock control, ordering, and delivery checks
* Monitor food quality, presentation, temperature, and portion control
* Lead kitchen hygiene, waste reduction, and sustainability initiatives
* Ensure compliance with all relevant policies, regulations, and safety procedures
* Manage labelling and allergen information protocols
* Supervise food service across patient areas, dining room, coffee shop, and functions
* Liaise with the Production & Purchasing Manager on planning, scheduling, and incident reporting
Skills and Qualification Requirements:
* QQI Level 6 in Professional Cookery or equivalent
* At least 5 years' experience in large-scale catering (institutional or healthcare)
* Strong understanding of HSE food service standards, cook-chill processes, and HACCP
* Proven ability to lead a team and manage high-output kitchen operations
* Fluency in spoken and written English
* Familiarity with food waste management and quality control systems
