Schull Harbour Hotel is seeking an experienced and driven Sous Chef to join our dynamic kitchen team. As the second-in-command in the kitchen, you will work closely with the Executive Head Chef to oversee all aspects of food preparation, lead the team during service, and ensure the delivery of high-quality dishes across all outlets.
Responsibilities:
* Assist the Executive Head Chef in the day-to-day running of the kitchen.
* Supervise and support the kitchen brigade to ensure consistent, high-quality food preparation and presentation.
* Take ownership of designated sections and lead service during busy periods.
* Ensure that all health, safety, and hygiene standards are adhered to.
* Assist in menu planning, stock control, ordering, and waste reduction.
* Train, mentor, and motivate junior chefs.
* Ensure smooth communication between the kitchen and front-of-house teams.
Requirements:
* Proven experience as a Sous Chef or strong Senior Chef de Partie ready to take the next step.
* Excellent culinary skills and knowledge of modern cooking techniques.
* Leadership abilities and the confidence to manage a team.
* A strong understanding of HACCP and kitchen safety procedures.
* Flexibility and the ability to work under pressure in a busy kitchen.
