Accurately and efficiently oversee the preparation of meals, vegetables, soups, and other hot food products, as well as prepare and portion food items prior to cooking. Assist where necessary. Perform other duties related to food and final plate preparation, including serving and garnishing cooked items, and preparing appropriate items for all hot & cold menu plates.
Directly supervise employees in the Food Service Department in accordance with company policies and procedures. Responsibilities include planning, assigning, and directing work; addressing complaints; and resolving problems. Maintain established costs and quality standards to ensure superior service and maximize profits.
Main Duties and Responsibilities
* Ensure all food and products are prepared and served according to recipes, portioning, and serving standards.
* Fill in where needed to ensure customer service standards and efficient operations.
* Prepare required paperwork, including forms, reports, and schedules in an organized and timely manner.
* Ensure all equipment is kept clean and in excellent working condition through inspection and preventative maintenance programs.
* Ensure product costing, seek approval prior to planning and pricing menu items, establish portion sizes, and prepare standard recipe cards for new menu items.
* Order products according to specifications, receive them in correct condition, and adhere to receiving policies.
* Conduct weekly stocktaking accurately.
* Control food costs and usage by proper requisition, storage procedures, standard recipes, and waste control.
* Schedule labor based on anticipated business activity, ensuring staffing levels meet needs and labor costs stay within budget. Seek approval for additional hours.
* Submit timesheets regularly.
* Report violations of company policies, rules, and procedures.
* Oversee training of personnel in safe equipment and utensil operation.
* Maintain kitchen cleanliness and sanitation practices.
* Ensure compliance with HACCP regulations.
* Maintain cleaning schedules for floors, mats, walls, equipment, and storage areas.
* Monitor food holding and refrigeration temperatures.
* Maintain a professional appearance, clean and well-groomed as per standards and uniform policy.
* Develop positive relationships with colleagues and customers, avoiding conflicts.
* Attend training sessions as required.
Qualifications and Experience
* Experience in kitchen preparation and cooking.
* Experience in a similar supervisory capacity.
* Clear communication skills with managers, kitchen staff, school staff, and students.
* Team player with good time management and organizational skills.
* Motivated, enthusiastic, and reliable.
* Ability to reach, bend, stoop, and lift as required in the kitchen environment.
* Ability to work in a standing position for long periods.
